Anatomy of a Doggie Dinner - a tutorial for making a homemade BARF dinner

Utensils: Chef's Knife, Meat Cleaver, Ladle
Foods: Cabbage, Broccoli, Carrot, Chicken Leg Quarter
Seasonings: Garlic Powder, Italian Herbs

* Prepare in advance some chicken broth with herbs and refrigerate until ready to use.  I use a 6-quart pressure cooker and cook 2 or 3 chicken legs on low heat at pressure for about 2 hours with Italian Herb Seasonings added.  This makes a delicious chicken / herb broth and has enough servings for 6-12 dinners.

1st Prep - Stage 1
Slice Vegetables

 

Food Preparation - Stage 1 - First Step
With a Chef's Knife slice one stalk of Broccoli in thin strips after removing the crowns and placing them aside.  Then slice one Carrot in thin strips and 1/8th head of Cabbage.

Slice carrots, broccoli & cabbage.

2nd Prep - Stage 1
Dice sliced Broccoli
Dice sliced Carrot
Add to baking dish
Season to Taste

 

Food Preparation - Stage 1 - Second Step
Dice Broccoli stem slices and Carrot slices and place in microwave safe baking dish.  You may sprinkle lightly with 1/8 teaspoon of garlic powder and 1 teaspoon of Italian Herb Seasonings (no salt).

Dice carrots & broccoli stems, chop cabbage.

Steaming - Stage 1
Dish in Microwave
Cover Dish
Microwave on High for 4 - 7 1/2 minutes
Remove & set aside

 

Precooking - Steaming Vegetables - Stage 1
Place dish in microwave and cover.  Microwave on high for anywhere from 4 to 7 1/2 minutes - depending on how crisp or tender you desire the vegetables to be.  For this 1st stage you should not need to add water unless the vegetables are somewhat dry - in that case add 1 tablespoon of water. Remove the dish from the microwave and allow to cool briefly.

Microwave steam diced carrots & broccoli stems for 7 1/2 minutes.

Dice sliced Cabbage
Add Cabbage to dish
Add Broccoli crowns
Mix Vegetables
Add  Chicken Broth
Season to Taste

 

Food Preparation - Stage 2
While the vegetables are being steamed in the previous step, dice the sliced cabbage and set aside.   After removing the baking dish from the microwave and allowing it briefly to cool - add the diced cabbage to the cooked vegetables.  Add in the Broccoli crowns, breaking them up into smaller pieces and mix well by hand.  Bring out your previously prepared chicken / herb broth and add 2-4 ladles full to the vegetable dish.  Again sprinkle the dish with a light dusting of Garlic Powder (1/4 teaspoon this time should be fine) and a generous amount of Italian Herb Seasonings (1 tablespoon). Italian Herbs add fantastic trace vitamins and minerals to the dish and also give a garden fresh aroma and taste which my dogs love!

Mix together pre-steamed diced carrots & broccoli stems with chopped cabbage and sliced broccoli tops.  Add some chicken broth (prepared in advance and refrigerated) and season with Italian herbs and garlic powder to taste.

Microwave on High for 4 to 7 1/2 minutes
Remove Dish

 

Cooking - Steaming Vegetables - Stage 2
Place covered baking dish in microwave and cook on high for 4 to 7 1/2 minutes depending again on how crisp or tender you desire the vegetables to be.  Despite some popular beliefs - lightly steamed / cooked vegetables are actually more nutritious than raw vegetables since light cooking actually makes it easier for a dog's short digestive tract to absorb more nutrients from these foods than from raw vegetables.  Cooking does indeed destroy many vitamins and other trace minerals - but only when the foods are overcooked or cooked at temperatures which are too high or for periods that are too long.  Steaming (and thus microwaving) are much less damaging to food products like vegetables than cooking with radiant heat or broiling.

Microwave steam diced carrots & broccoli stems, chopped cabbage & sliced broccoli tops for 7 1/2 minutes.

Get Chicken Leg
On Cutting Board chop the leg into bite sized pieces with the Meat Cleaver
Season to Taste

 

Food Preparation - Stage 3
While vegetables are cooking in the previous step remove one Chicken Leg Quarter from the refrigerator.  Using a Meat Cleaver chop the Meat serving into small bit sized pieces.  Sprinkle Meat pieces lightly with Italian Herbs.

While vegetables are steaming, cut / dice the chicken leg quarter and lightly coat with Italian herbs (excellent for trace minerals and vitamins).

Add chopped Chicken Leg pieces to hot vegetable dish and cover for 10 minutes to flavor the meat
Now refrigerate or continue to cool dish until contents are no longer  too hot to eat

 

Food Preparation - Final Stage
Remove steamed vegetables from the microwave oven. While the dish is still hot add the seasoned / chopped Chicken Leg Quarter pieces. Cover the dish and allow to sit for 10 minutes to cool.  This does not actually cook the meat, but does allow the steam from the vegetables to aid in flavoring the meat with the herbs that were sprinkled on the meat pieces in the previous step.  You may refrigerate the dish at this time or wait until the dish has cooled sufficiently to be served to your pet. 

Before serving test the temperature of the dish. If the outside of the dish is too hot to touch - let it cool longer.  Once the dish is cool enough to handle remove the cover and stick your finger into the food - if the temperature is too hot to be comfortable for your finger then it is too hot for your pet to eat, cool it a little longer before serving.

Remove steamed vegetables from microwave and add sliced / diced chicken leg quarter and let set for 10 minutes.  This step helps to lightly steam the herb flavors into the meat without actually cooking the meat. The dinner may now be refrigerated for later use or served immediately - but make certain the meal is not too hot for sensitive doggie mouths.

Serving & Clean Up
Place properly cooled food into dog dish.

THOROUGHLY CLEAN ALL DISHES, UTENSILS, AND FOOD PREPARATION AREAS.  STORE FOODS IN CLEAN SAFE AREAS AT PROPER TEMPERATURES.  ONLY BUY FOODS FROM QUALITY, RELIABLE FOOD VENDORS!

 

Serving & Clean Up
Place cool dish contents into serving dish.  Use warm soapy water to clean all dishes and utensils.  You may add a small amount of bleach to ensure good disinfecting of these items since they may have come in contact with the raw meat.  Clean all affected counter surfaces with dish water and then rinse the same surfaces with mild bleach water to again disinfect the area.  One of the most important factors in feeding raw meats is how these foods are purchased, stored and handled and how thoroughly the preparation area, dishes and utensils are cleaned afterwards.  

BE SAFE AND ALWAYS DISINFECT - MAKE CERTAIN YOU WASH YOUR HANDS BEFORE AND AFTER HANDLING ALL FOODS! STORE FOODS AT SAFE TEMPERATURES IN A CLEAN ENVIRONMENT!  ALWAYS PURCHASE FOODS WHICH ARE REASONABLY FRESH AND OF GOOD QUALITY FROM RELIABLE AND WELL KNOWN FOOD VENDORS!

Use warm soapy dish water to clean all utensils (may add bleach to the dish water to ensure good disinfecting of utensils when raw meats were used).  Clean all surfaces that came in contact with the raw meat with properly prepared bleach water to disinfect.
